The artisanal bread producers of La Frailesca and their needs for regional competitiveness

Abstract

The city of Villaflores, Chiapas, is the head of the Frailesca region, located in the center-west of the state, within the geomorphological depression determined by the Sierra Madre and the central plateau of Chiapas. Villaflores is characterized by being an area in constant economic growth. Commerce is one of the main sources of support for the Villaflorences families. Among these activities is the production of artisanal bread, which is not only part of the diet, but also takes on relevance due to the meaning that bread has in some rituals. religious and social. This document aims to highlight the needs of artisanal bread producers to face the competitiveness that leads to the need for the creation of an associative structure for bread producers. Bread producers in the municipality of Villaflores, Chiapas face different problems, which include the increase in raw material prices, optimization of resources and the lack of financing for production. Methodologically, this study is based on a field study in which thirteen artisanal production bakeries were focused, applying findings that derived results around their problems but also in their association option. This study also allowed us to locate the joint shortcomings between producers in order to propose a form of associativity where everyone can solve problems together.
